Importance of Food Sensory Evaluations

Food Sensory Evaluation is a process of assessing the food product to judge and evaluate the sensory quality by a panel of sensory experts for its sensory attributes like appearance, taste, aroma (flavor), texture etc.

For any food to be acceptable by the consumers and for its repeated purchases, it is of paramount importance that the sensory quality of that food should be perfect with regards to its taste, aroma/ flavor, appearance and texture. AIS evaluates the foods using its team of sensory experts in its state of art testing facility to judge the food samples on merit and rank them according to the sensory scores. This helps to identify the areas of improvement in the sensory quality of the product which is a useful tool for continuous product improvement process.

The ready to eat products are evaluated directly as such while the raw and uncooked processed products are evaluated after cooking as per the respective cooking instructions prescribed and then evaluated for their sensory attributes.

Sensory Evaluations can be done for all the foods available in the competitive markets. Some of the products (but not limited to) that can be evaluated for their sensory quality are as follows:

* all the dairy products like cheeses, yoghurts, ice creams, flavored milks etc.

* all the processed meat products made from chicken, mutton or beef like frozen burgers, nuggets, sausages, meat ball, mortadellas, kebabs etc.

* all the processed fish products like frozen fish fillets, fish cutlets, canned tuna, canned sardines, etc

* all the processed fruits products like jams, jellies, marmalades, fruit juices, canned mango pulp,  canned pineapples, canned mango slices etc

* all the processed vegetables like canned sweet corns, canned mushrooms, canned asparagus, all types of pickles etc.

* all types of processed raw pulses like China daal, moong daal, urud daal etc and canned pulses like canned chickpeas, canned green peas etc.

* the other products like soft drinks, tea ( tea bags or tea granules) and bottled water can also be evaluated for their applicable sensory attributes.
